The heavily spiced pork is shaved off a vertical spit with machetes and folded into tacos with a sliver of pineapple, chopped onion, and cilantro. If you want cheese, order a gringa, a flour tortilla that sandwiches the al pastor with cheese. Salsa sits in hulking molcajetes on the counter. Start with two al pastor tacos and then repeat as needed."
