Amandine Chaignot, who honed her skills at Le Bristol and Le Meurice and was a jury member for the TV show MasterChef, has opened her first restaurant, Pouliche, for diners to enjoy "a gastronomy that celebrates vegetables and forgotten ingredients, like juniper and nutmeg".
This is an instinctive cuisine, whose menu varieswith the moodof the day. Made- to-share starters include shrimp and corn tempura followed by creamy celery risotto with Jerusalem artichokes. An all-vegetarian menu on Wednesdays.A la carte: €30- €50.
