Shalom Japan - Restaurant Japonais Juif à South Williamsburg
Shalom Japan est un petit restaurant inspiré de South Williamsburg qui trouve son créneau culinaire dans le mélange des plats japonais et juifs ashkénazes. Tous les plats ne sont pas une fusion des deux styles, mais beaucoup, comme les ramen aux boules de matzoh ou le formidable bol de saumon farci d'avocat, de cornichons japonais et de riz pour sushi, se situent astucieusement à cheval sur les deux cuisines. Commencez par un tartare de toro parfaitement présenté sur un challah au saké kasu cuit sur place, tartiné de fromage frais aux échalotes et relevé d'épices "tout", ou des ailes de canard teriyaki délicieusement tendres, un duo de pilons glacés à la perfection sucrée-salée et terminés par un flottement d'échalotes et de gingembre mariné. Pour le dessert, le pudding de pain challah au chocolat et à la banane, accompagné de crème fraîche fouettée et de caramel au whisky, mérite que l'on s'y attarde.

"Bib Gourmand 2023 This inspired little South Williamsburg spot finds its culinary niche in mixing Japanese and Ashkenazi Jewish fare. Not all the dishes are a fusion of the two styles, but many-like the matzoh ball ramen or the terrific lox bowl stuffed with avocado, Japanese pickles and sushi rice-cleverly straddle both cuisines. Kick things off with perfectly presented toro tartare over house-baked sake kasu challah, spread with scallion cream cheese and topped with "everything" spice; or deliciously tender teriyaki duck wings, a duo of drumsticks glazed to sweet-and-salty perfection and finished with a flutter of scallions and pickled ginger. For dessert, the chocolate-banana challah bread pudding with whipped crème fraîche and whiskey caramel, is a worthy splurge."
