In the shop of gifted pastry chef Yann Couvreur, former talent at Hotel Prince of Wales Hotel, you can discover his creation: a revisited mille-feuille. The pastry is assembled on demand. "This is essential, since I am first and foremost a restaurant pastry chef!" says Couvreur. This way, the tuiles don't go soft from the cream. "The client must taste this pastry freshly constructed for maximum effect."
