"Atelier Moessmer Norbert Niederkofler is a three-Michelin-star restaurant (plus a Green Star for sustainability) set in a historic 19th-century villa in a 6,000-square-meter park near the center of Brunico (Bruneck) in the Pustertal. The villa was once the manor of the Moessmer textile mill, a loden producer founded in 1894, and the restored interior keeps that heritage visible, with original dark wood floors, mounted tweed and fabric panels, and an early-20th-century fabric book displayed in the dining room. It's the home of Niederkofler's "Cook the Mountain" philosophy, a seasonal tasting-menu format built on hyper-local Alpine ingredients, foraged and farm-sourced, which he carried over from the legendary St. Hubertus before opening here in July 2023 and reclaiming all three stars within months. The room is intimate, seating around 30, with the option to dine in the historic villa or at a convivial counter overlooking the kitchen."

A dish that impressed the inspectors – as it translates this philosophy with surprising strength – was the risotto featuring robiola cheese, grated egg yolk, and cress. It is a fragrant dish with such intense pungency that it almost brings horseradish to mind, but without the excessive spicy kick: a brilliant, pleasantly balanced recipe."
