The tasting menu – entitled ‘Solar’ – follows 24 solar micro-seasons throughout the year, and the original, exciting dishes combine Danish ingredients with Asian recipes and flavours. The focus is largely on vegetables, with produce sourced locally from organic farms and ethical producers, and any food waste is turned into miso and shoyu in collaboration with Koji Copenhagen. "Jonathan Tam har en lang fortid som køkkenchef på Relæ, og med Ja Tak kunne han vist ikke have drømt om en bedre begyndelse på sit eget eventyr. Han kom til Danmark i 2007 og landede sit første job på Noma, men når man smager hans retter på Ja Tak, så er det tydeligt, at han både bringer sin fortid på et par af Danmarks bedste nordiske restauranter og sin egen gastronomiske baggrund i spil. Retterne er nemlig på flere måder opbygget efter det rene, nordiske køkken med få ingredienser i hver ret, men smagene stammer fra Vietnam og Kina."
