Via Carota : le restaurant italien incontournable à New York

@augustin.daube

"Sparsely decorated yet warm and inviting, with plenty of wood and exposed brick, Via Carota is the kind of place where you might run into celebrities, but where you’ll feel totally comfortable sitting next to them in jeans and a T-shirt. But they don't take reservations here, so the flip side of all that cool is that waits at peak times can push three hours. The menu is full of supremely delicious creations from Rita Sodi and Jody Williams, who between them run Buvette in NYC and Paris, I Sodi a couple blocks away, and Bar Pisellino across the street. Even the relatively straightforward vegetable dishes, like the carrots with yogurt and pistachios, are remarkable in their fresh simplicity."

@chaunch26

"Omar’s and Paul’s reco 3rd on The Infatuation Top 25 2025 It doesn’t matter that Via Carota has been around for more than a decade because the buzz over this place is consistently set to crazed. Supposedly reservations are released a month out every day at 10am, but stories abound about the tables made available are at off times—3:15pm lunch, anyone?"

"Many people don’t even know Via Carota takes reservations, which just proves how hard they are to come by. If you don’t want to put your name down at 4 and be told to come back at 9, try to secure a reservation on Resy 30 days in advance. Reservations are extremely limited, so be sure to mark your calendars! I don’t know about you, but I’ll make dinner plans one month in advance with that guy I’m not sure I’m into, just for the Cacio e Pepe. also mentioned in the Wallpaper guide; "a no-reservations Italian-inspired hit by Jody Williams and Rita Sodi""

"#5 on NYTimes best of 2024 list"

@ibaker11

"N•4 on NYTimes 100 Best restaurants in NYC :On paper, very little about Via Carota is novel: rustic trattoria furniture, variations on the Negroni, a mix-and-match seasonal Italian menu. Yet Jodi Williams and Rita Sodi put them all together so cannily that Via Carota transcends this overworked source material. It’s both a model of the genre and something different. This extends to the cooking, which flirts with deep familiarity but then gives you thrills you can only get right here. https://www.nytimes.com/interactive/2023/dining/best-nyc-restaurants.html / It’s currently our favorite Italian spot in Manhattan, slightly edging out the latest iteration of sister restaurant I Sodi, so swing by for some world-class cacio e pepe and a crisp, towering salad. Just be sure to arrive before 6pm. Via Carota is essentially walk-in only, with limited reservations, and we aren’t the only ones who love this place. [theinfatuation]"

"West Village Italian Pre-pandemic, Via Carota was one of those restaurants West Villagers despaired of getting into. Mainly, it was first come, first served, with a system that involved scrawling your name on a chalkboard, then waiting forever in a knot for a table. Yes, the food was fantastic, a collection of Italian classics that observed the seasons with an emphasis on vegetables. But the pandemic changed the place. Tables spilled out onto the street, neighboring offshoot Bar Pisellino reopened, and suddenly it was possible to stride up and claim a seat, especially mid-afternoon or late in the evening. And what a scene! The menu continues to evolve, but the deep-fried rabbit, voluminous insalata verde, and svizzerina (the bunless house burger) are still the ones to beat."
