Sip&Guzzle, ouvert en janvier 2024, est le fruit du savoir-faire d’alums de lieux emblématiques comme Angel’s Share et Employees Only. Situé au 29 Cornelia St dans le quartier West Village, ce lieu innovant combine un bar à cocktails et un restaurant dans un concept bi-level. La création de Shingo Gokan, reconnu pour ses bars à Tokyo, et Steve Schneider, ce bar offre une expérience unique mêlant influences japonaises et américaines. "F&w top 10 bar in America plus number 13 burger worldwide Availability: 12 per night Sip & Guzzle opens at 4pm. When we visited, they were sold out of their Tavern Burger by 4:01pm. If you don’t have a 4pm reservation, you’ll have to line up outside the West Village bar, and if you think a 4:15pm reservation is going to cut it—it’s not. How much you enjoy this $35 specimen will depend on your tolerance for all of the above, but if you can handle the humiliation of standing on Cornelia Street with a bunch of other burger-chasers when you should be at work, it’s pretty great. The A5 wagyu patty has a thick crust and a molten center, with binchotan mayo, shishito relish, and a kraft parmesan single, all on a sesame seed bun from Breads Bakery. If the hype ever cools down, its ranking might rise."

"From the team behind the Tokyo location which is a best 50 bar. Ground floor Guzzle has a few cocktails that they serve at their Tokyo location, but downstairs Sip is where you’ll find the most inspiring drinks and food. The Wax On cocktail is my favourite, and is delicious with fig notes served in a glass with melted white chocolate to look like wax. The food is crazy expensive but wonderful and the échiré rice cakes served with vin jaune and hazelnuts is so good. The Hokkaido milk and strawberry soft serve is also amazing. Best bet is to get there at 4 and put your name on the list for sip, which opens at five (but you probably won’t get an opening until 6:30 after their first seating)"

Steering Sip on the lower level, there’s Shingo Gokan: Before opening eight bars across Japan and China, Gokan had been the bar director for a decade at Manhattan’s Angel’s Share, which debuted in 1993, shuttered, then reopened in July in the West Village. Alum of Employees Only, Steve Schneider helms the upper level, Guzzle, offering classics and more familiar cocktails. "Went 3/24 and had drink at Guzzle as Sip had a private event. Went back to Sip 11/24 and had a Wagyu Old Fashioned. Bar with 6 stools and small long room with ~12 tables. Went on a Sat at 5pm alone and got seat at bar. (Had walked by 12/30/23 and was not open yet). Had a Super Lychee Martini (SG Sochi, lychee, raspberry, grapefruit, rose & dairy used for clarification). Front bar with a dozen seats and back room with tables. Guzzle has ok decor but nothing amazing. After globetrotting for years opening spots like The SG Club in Tokyo, The Odd Couple in Shanghai, and a Singapore outpost of Employees Only, Shingo Gokan and Steve Schneider are returning to New York City to unveil a new bar this fall. Sip and Guzzle is a bi-level concept where the first floor bar, Guzzle, will have classic cocktails in a high-energy atmosphere, and Sip will be the basement speakeasy. Drinks at both bars will honor Japanese and American bar culture and the izakaya-style food comes courtesy of chef Mike Bagale (formerly Chicago’s Alinea).
