Nem Tóquio tem uma coquetelaria tão vasta e importante e nova e boa e com bares legais, em todos os estilos. No topo da minha prateleira, está o @tayer_elementary , um bar (ou melhor, dois em um) que cumpre todas as funções que eu desejo, menos a dos bares de hotel. Um bar que é revolucionário, tanto em técnica, quanto em postura e sabor; que extrai drinks de elementos improváveis, dificílimos; tem música ótima, gente bonita, de todas as idades; que atende com atenção e carinho, sem palestrar; que vende drinks para viagem; que o drink chega em 2 minutos; tem comidinhas; tá todo mundo sorrindo. Um bar legal para cacete, com drinks bons para mais cacete, da simples e direta Margarita de Bergamota ao cabeçudíssimo Oak Moss+Vetiver, ou o golaço que é o One Sip Martini, um mini dry para beber entre os drinks. É tudo pré-engarrafado, batched, em garrafas, barris ou máquinas de raspadinha pros frozen. E isso gera nariz torcido de muita gente. Na fragilidade do debate sobre pré-engarrafados, clarificados, pectinados ou preservados de qualquer forma, falta a pergunta que mais importa: o drink é bom, é gostoso, desce delícia? E sobram platitudes e falta de prioridades: ver o bartender trabalhando na sua frente, fazendo balé, a birra pela padronização (oi?), poder escolher a marca de bourbon no drink (como se fosse tão comum assim). Aliás, no Tayer, o balé de bar também está lá (olha o nado sincronizado do vídeo no carrossel). Em segundo lugar, a outra pergunta que deveria aparecer, mas é esmagada por adjetivos semi técnicos que tentam explicar horrorosamente o conceito de hospitalidade: o bar é legal, é divertido, faz a noite boa? É isso que importa. O Tayer+Elementary cumpre e brilha em todos os quesitos. Já fui umas 10 vezes. Bem-vindos ao meu bar favorito do mundo."

"Lorsque Monica Berg et Alex Kratena ont lancé Tayēr + Elementary en 2019, cela ressemblait à un aperçu du futur. Chaque élément du bar à cocktails a été repensé, de la conception à l'approche du service et de la fabrication des boissons. C'est un lieu en deux parties. Elementary est l'espace côté rue de style industriel, le bar de tous les jours où vous entrez pour un verre rapide, avec une longue table commune et des cocktails de saison servis à la pression, ou le vin et la bière de marque maison tout aussi à la maison. Vous y trouverez la signature One Sip Martini et un menu tournant de rotations saisonnières sur les classiques. Ce sont des plats simples, sans affectation, servis dans des verres uniformes qui mettent l'accent sur le liquide. Chez Tayēr, à travers la cloison, il y a plus une approche médico-légale et culinaire, avec des ingrédients moins connus travaillés par des équipements de haute technologie pour offrir de nouvelles expériences gustatives. Avec des recettes qui changent quotidiennement, c'est l'équivalent liquide d'une cuisine raffinée, mais sans aucune prétention. La seule chose qui est difficile, c'est le dévouement du bar à la saveur."

"Apparently it’s one of the most famous cocktail bar in London. We’ve only tried the Tayer’s bar (there are two different cocktail bars in one place, one called Tayer and the other at the back called Elementary). We found that drinks were very expensive (£15) for pre-made (bottled) cocktails and we were not particularly impressed. It’s good yes, but does it worth the hype? I’m not entirely sure (at least for the Tayer’s bar). IMO You can easily find better cocktail bars in London."
