The studied cool of the kitchen extends to its crowd; and the striking warehouse setting, blends rusticity with refinement. Everything revolves around the roaring hearth.The kitchen is in steady hands and proffers an immersive experience. First, caviar cured with salt "barbecued" by the team, is wrapped in a seaweed bundle, then presented tableside before being set in a bowl of wilted, silken spinach and a seaweed-and-butter broth. Then, 18-day dry-aged antelope saddle medallion is an intriguing delight with jus made from bones and dried cherry leaf, thinly sliced preserved kumquat and a cup of bone broth to wash it all down. "

"Wow… what a spot. 9.3/10 . Seven courses later still drooling. Started with wheatgrass tea which had been aged for weeks. House bread was glazed and so unbelievably soft in the middle. In order: tuna, tomato with pickled watermelon, pepper jam, and seaweed, Hokkaido scallop, sea urchin uni on liquid toast, and the best duck I’ve ever had. Duck breast, duck heart and gizzard, duck legs wrapped in nasturtium leaves, and duck bone broth. Fermented cactus, and cabbage. Plus some others I was too busy eating to remember. Whew will be back. "

"Amazing dinner. My words won’t do it justice so I’ll keep it short. The flight of duck was the highlight and the best thing I have eaten in a long time. Uni toast was also out of this world. I won’t judge the ambiance since we sat outside. I’ll give it a 9.6/10. Could easily be a 9.9 but I want to leave some juice to move up since we sat outside which served a smaller tasting menu relative to the inside of the restaurant "
