Katana Kitten - Bar à Cocktails et Restaurant
Le Katana Kitten (sabre de samouraï en japonnais) est situé dans le quartier de West Village à New York. C’est un bar à cocktails sur deux étages avec une ambiance à la fois rétro et festive de super-héros japonais des années 80. Cet établissement très tendance a remporté le Spirited Award (l’un des prix les plus importants de l’industrie de la restauration aux États-Unis) moins d’une année après son inauguration. Masahiro Urushido, le "directeur des délices" de Katana Kitten, est une icône. Pourtant, ses nombreux prix – dont celui des 50 meilleurs bars d'Amérique du Nord Altos Bartenders' Bartender 2022 – n'ont pas changé son dévouement à l'hospitalité. Les clients sont chaleureusement accueillis lorsqu'ils descendent des rues de New York dans son bar japonais souterrain. À l'intérieur, les invités sont instantanément plongés dans une fête authentiquement années 80. Puisant dans les influences asiatiques, des highballs comme le Slowpitch Paloma (tequila, Pocari Sweat, piment thaï, zeste de citron vert) sont en tête d'affiche de la carte. Co-vedette, des riffs japonais sur des classiques tels que la signature Hinoki Martini (vodka, gin, sherry fino, junmai daiginjo et essence d'arbre hinoki)...Le côté culinaire adhère également aux racines izakaya. L'humble sandwich au poulet est évoqué dans un spectaculaire Sando au poulet croustillant Fujimi (marinade soja-ail et saké, oignons verts, concombre aigre, mayo épicée et pain au lait). Des bouchées légères telles que Giant Head On Blue Prawn (marinade crevettes-pâte de soja, daikon mariné, sésame) valent à elles seules le déplacement.

"When you visit a bar named after a Samurai sword and a cat, you know you’re not in for a routine drinking experience. Katana Kitten is the digs of bartending’s greatest smile, the Japanese New Yorker Masahiro Urushido, who, off the back of pedigreed postings at some of the Big Apple’s best bars, created a very particular, personal venue with the backing of James Tune and Greg Boehm. In essence, this Greenwich Village bar is a hybrid concept – half American dive, half Japanese highball bar, with the sort of quality-focused offering yet everyman vibes that magnetise off-shift bartenders. Long whisky drinks are the popular choice here (try the Toki Highball), or for simpler pleasures, you’ll find a list of paired beers and whiskies (see Boilermakers). But new on the menu are Urushido’s Japanese seasonal takes on the Old Fashioned – this winter it’s Momiji, taking in shochu, houjicha, maple sugar, spice and a touch of dark rum. An American structure but with Japanese components – that’s Katana Kitten."

But Urushido is equally adept at more complex mixes; he has a shortlist of signature cocktails too. The Japanese skewers – reminiscent of a yakitori bar – will make you smile too. Sure, the Happy Hour here doesn’t have any crazy deals - but the fact that this place has a Happy Hour at all is impressive, and you should use this as an excuse to stop by, drink some sake, and eat a hot dog with Japanese pickles and mustard. Bring a friend, and either hang out in the bright upstairs area or grab a table in the room downstairs with red fluorescent lighting"
