"This and Steve Martin are the only two good things to ever come out of Waco. Joking aside, Balcones is one of the finest examples of the breadth and quality of Texas whiskey. A release like Baby Blue - a native corn whiskey aged for three months in the Texas heat - showcases their ability to be creative with what they had available. Newer releases feature Texas versions of peated Scotch counterparts and Madeira finishes. Where Balcones shines is their new make spirit - if you tour you can taste it yourself. One sip and it soon becomes clear that the what makes this whiskey so good is what comes out of the still. Maybe that’s because the guys behind the still at Balcones were brewers before they were distillers."
