"Galatada butik bir kahvaltıcı olarak başlayan serüvenlerinde tanıdım ben Ahesteyi. İstanbul'un en iyi kahvaltısını verdiklerini düşünerek büyük bir zevkle yıllarca her pazar sabahı yollara düştük. Bir süre sonra strateji değişerek kahvaltısı servisine bir de akşam yemeği eklediler. Yavaş yavaş odak noktası kahvaltıdan öğle ve akşam servisine kayınca da müdavimi olan ben gitmeyi bıraktım. Galata'dan Şişhane'ye taşınmaları ve yakın çevremde tekrardan ismini duymaya başladığım zaman da akşam yemeği için şans vermeye karar verdim. Şef Sara Tabrizi, kendi şahsiyetini ve kökenlerini mutfağa muhteşem aktarmış. İran ve Türk mutfağını harmanlayıp genelde lezzetli tabaklar yaratmış. Ben menüdeki zehir zemberek ve dudi pilavını lezzetli bulsam da diğer bütün tabaklardan ayrışan Kokoreç oldu. Şaşırtıcı bir şekilde İstanbul'da yediğim en iyi kuzu kokoreçi burada yedim. Kuzu bağırsağından yapılan kokoreçin içi uykuluk ve iç yağlarla lezzetlendirilmiş. Dışı iyice kızarmış ve çıtırlaşmış. İçi ise ne çok ağır ne de kurumuş. Sırf kokoreç yemek için gidilmeli diye düşünüyorum."
