"East Hollywood Thai $$ Take out Few modern restaurant legends have endured like the story behind Jitlada: Chef Suthiporn “Tui” Sungkamee, who died in 2017, and his sister Sarintip “Jazz” Singsanong took over the long-running restaurant and introduced a then-untranslated back page full of radically spicy Southern Thai specialties. Those dishes have been incorporated into its 10-page English menu for a while now, but their written accessibility doesn’t mean the kitchen has diminished their incandescence. As a masterclass on regional Thai cooking, Jitlada is indispensable. The choices can overwhelm, true, though reconnecting with an old favorite can feel like rediscovering a beloved novel. It happened for me recently after ordering kaeng kung yawt khaam awn, shrimp and young tamarind pods in a soupy curry lit up with turmeric. There were shadings in its fiery, fruity-sour intricacy I’d missed before. I never forget the effect of the herbaceous jungle curry with lamb; it’s so visceral with capsicums that its ingestion borders on supernatural possession."

In order to navigate their menu of biblical proportions, avoid the treacherous dynamite spicy challenge and order one of Jitlada’s crab curries and the fried morning glory salad.  Chef Suthiporn “Tui” Sungkamee and gregarious sister Sarintip “Jazz” Singsanong opened Pandora’s box on their southern Thai repertoire and recipes continue to spill on to the menu, which is now way more than 300 dishes deep. Blink and you’ll miss kua kling, a fluffy omelet packet stuffed with a fiery blend of ground pork, Thai chilies, and turmeric-stained curry. Each order comes with a tangy chile sauce and complementary roughage: red bell pepper, carrot, cabbage and cilantro. 5233 Sunset Blvd., Los Angeles, 323.667.9809, www.jitladala.com Jitlada, I will concede, can be a little taxing for a newcomer. There is a large menu of traditional Thai favorites and a sprawling photocopied addendum at the back that includes most of the Southern Thai specialties for which the restaurant is renowned. If you guess correctly and end up with something like khua kling and an acacia blossom omelet, you may be unprepared for the heart-stopping chile heat of the curry. You could play it safe with curried mussels and the crunchy salad made with fried morning glory, but you will have missed a bit of the wildness in Suthiporn “Tui” Sungkamee’s cooking. On the other hand, curried fish kidneys and fried silkworms with chile may not be your jam — but if you try to meet Jitlada halfway, you need never be bored."
