"Shingo Gokan’s flagship Tokyo bar spent much of 2021 boarded up with a “We regret to inform you…” sign outside. Unlike most bars in the city, though, it wasn’t closed. If you read the sign vertically, in Japanese, it said “We’re open”. Those who figured it out found the three-storey bar as busy as it’s ever been. In the basement, it’s still hard to snag a seat for the head-spinning creativity of head bartender Yuya Nagamine, whose latest creations include the exceptional Wind of Oslo, with its base of shochu, aquavit and condensed beer. A floor above, everyone can find space in the casual bar where long drinks rule, and up top, the once members-only bar is now open to all, with veteran barman Takahiro Watanabe serving drinks to match the various stages of a cigar. These days, Gokan is next door in his new bar-restaurant Swrl, where innovative wine cocktails are poured alongside South American influenced cuisine."

"With two Shanghai-based cocktail clubs claiming spaces on Asia’s 50 Best Bars already under his belt, Japanese bartender Shingo Gokan has finally launched his first solo project on home turf. Emphasising a fusion of Japanese and American bartending styles, and incorporating unsung flavour combinations using ingredients from all over the world, The SG Club, which stands for “Sip” and “Guzzle”, claims two floors, with slightly different drinking experiences offered on each. At Guzzle, upstairs, guests sip drinks such as the Banana Daiquiri within a pub-like space, while downstairs at Sip, an industrial aesthetic and jazz sets the tone for more spirit-forward intoxicants, such as the LOL, built with aged Scotch, aged plum liqueur, and melon."

At entrance level, bartenders in Ralph Lauren waistcoats and boot-cut denim serve riffs on Japanese izakaya drinks (Lemon Sours, Tea Highballs) as well as hits from owner Shingo Gokan’s time in New York and Shanghai (Parmigiano Sour, Piña Colada slushy). Head downstairs for leather banquettes and contemplative slow sippers like the hybrid Martini-Manhattan. Go upstairs for the cigar bar, where cocktails are designed to pair with the top, middle and tail of a smoke. And finally, there’s the hatch for take-out cocktails in plastic cups, perfect for the nearby Yoyogi Park. The team has been busy in 2020, launching a trio of own-brand shochus designed for cocktails, revamping the menus to spotlight those new spirits, and at a time when flying abroad was all but impossible, launching SG Airways, a cocktail-pairing dinner event that takes guests on a whirlwind round-the-world gastro-tour, complete with boarding passes for menus."
