"Cuban ex-pat Julio Cabrera spent decades touring the world in promotion of his native island’s unique style of drinks, food, and celebration. In 2019, he teamed up with James Beard award-winner Michelle Bernstein to open Café La Trova, a mecca for Cuban bar culture. Situated in Miami’s Little Havana neighbourhood, Trova specialises in the 'cantinero' style of bartending created in early 20th-century Cuba. Handsomely uniformed bartenders still 'throw' classic drinks, like the Hotel Nacional, through the air from tin to glass. Daiquiri Clásicos and Periodistas are theatrically shaken. And, when the nightly live band strikes up, the cantineros behind the bar pull out maracas to provide backup percussion. Bernstein rounds out the experience with an authentic menu of island favorites. Snacks include a selection of empanadas and croquetas. Heartier fare arrives in the form of staples such as fresh fish sautéed in mango-lime butter with coconut rice and lechon."
