"An institution founded in Kyoto in the 16th century, wagashi specialist Toraya came to Tokyo with the emperor in 1869 when the capital was moved. Its flagship reopened in 2018 after a makeover by Hiroshi Naito who dressed it in hinoki wood, with a pitch-black shikkui plaster wall by Akira Kusumi and kumiko latticework in a basement that details the story of Japanese confectionery. In addition to the classic yokan (ellies) and baked half-moon ginger-tinged zangetsu. the cute senri-no-kaze, intended to evoke a running tiger, is only available here.
