"Tocabe, An American Indian Eatery is one I’d put above Gladys if you want something uniquely Denver. It’s an Indigenous-owned fast-casual restaurant at 3536 W 44th Ave, opened in 2008, specializing in contemporary American Indian food built around Osage family recipes and ingredients sourced “Native first, local second.” For a first visit, I’d order the Indian taco with bison on fry bread. The fry bread is the signature item, and bison is one of Tocabe’s specialties. The bison ribs with berry BBQ sauce are another standout when available. For dessert, get wojapi, a thick berry sauce, with fry bread. Those are also the items that repeatedly come up in diner recommendations. It’s not a fancy sit-down restaurant — think counter-service/build-your-own, roughly analogous to Chipotle in format, but with Indigenous ingredients, grains, meats and toppings. That actually makes it an easy lunch or casual dinner stop. Current North Denver hours are Tuesday–Saturday 11 AM–9 PM, Sunday noon–8 PM, closed Monday. One other interesting point: Tocabe now also has a location at Denver International Airport near Gate A38, which opened in April 2025. Between Gladys and Tocabe, I’d pick Tocabe first. Gladys is excellent if you specifically want creative vegan food; Tocabe gives you an experience and cuisine you simply don’t run into very often."
