At the decade-old restaurant in Sydney’s Paddington neighborhood, chef-owners Josh and Julie Niland have challenged themselves to test the category’s limits, using nearly every part of what comes across their counter and dreaming up entirely new ways to cook it. Tasting menus feature the best of the country’s waters, with regionally specific catch like nannygai, a kind of redfish, from waters off Western Australia. But the truly special dishes are those that use the offcuts and gristly parts. Yellowfin tuna bone marrow is used to make fudge; the bones of Queensland coral trout are ground into a binding agent for noodle and pasta doughs. After the nannygai’s flesh is grilled over charcoal, its eyes make their way into ice creams, custards, and other surprising desserts. Each menu item includes the seafood’s place of origin and the name of the person who caught or collected it, marking a reflection of the team’s commitment to short, traceable supply chains. In 2024, Saint Peter moved from its original location to the heritage-listed Grand National Hotel, a historic former pub nearby that now includes 14 comfortable guest rooms on the floors above the restaurant."
