Son objectif était de combler le manque d’un véritable restaurant japonais proposant des udon de qualité à Londres, offrant ainsi une expérience culinaire authentique. Case in point: the restaurant’s English breakfast udon, a brothy bowl of noodles topped with a sunny-side-up fried egg, bacon and shiitake mushrooms. The dashi broth, made with smoked bonito that echoes the flavor of the bacon, and the Sanuki-style noodles — a hearty, chewy variety that originates on the Japanese island of Shikoku — are made fresh daily in Koya’s central kitchen in London Fields and bicycled to the shop’s three locations each morning. There are now outposts in the City neighborhood and Hackney, though the English breakfast udon is served only at the Soho original, where off-duty local chefs slurp from oversize bowls at the long oak bar. Koya Soho doesn’t take reservations, so be prepared to line up for lunch and dinner. Breakfast, happily, is always quieter. "
