Owner of Tokyo and Hong Kong based “Edo Mae Sushi”, Mr. Masahiro Yoshitake continues to deliver to the world. “Sushi Yoshitake”, a restaurant with a limited space of 11 seats, attracts customers who seek a gastronomic experience. The restaurant has been awarded three stars from “Michelin Guide Tokyo” since 2009, when they moved location from Roppongi to Ginza. The Hong Kong store “Sushi Shikon” was rated three stars in 2014, by the Hong Kong & Macao Michelin Guide. Mr. Yoshitake is the only Japanese chef being rated three stars both in Japan and overseas.
Mr. Yoshitake’s carefully selects the fish for his sushi. Seasonal fish is tasteful and used for both sushi and nibbles for drinks. White fish is kept for about 1 week in a special temperature to enhance the Umami, and tuna is kept for 4 to 5 days.
Another specialty is the steamed abalone. The liver sauce used in this original dish a culinary delight. Add a little of this tasteful liver sauce to the big abalone, then mix the remaining sauce with the Shari(rice) and eat it like risotto. This restaurant will introduce you to the depth of Sushi cuisine.
