"Located in Lincoln Heights, Gamboge is a Cambodian deli/cafe/marketplace with excellent food that’s perfect for a quick lunch on one of our favorite patios in town. While we certainly recommend the chicken salad and the grilled coconut corn, the stars of the show at Gamboge are the num pang. A close cousin to the banh mi, they’re served on crunchy bolillo bread (a variation of a baguette) and filled with everything from poached chicken to grilled oyster mushrooms. Our favorite right now, however, is the spicy pork shoulder, which comes marinated in a lemongrass paste and topped with pate, chili jam, mayo, pickled papaya and carrot slaw, and other garnishes. It’s a fragrant and savory masterpiece, with just a little kick of heat at the end. Lincoln Heights $ Take out By JENN HARRIS Hak Lonh and Jane Oh opened their Cambodian restaurant in Lincoln Heights as a way to tell the story of Cambodian food and immigrant culture. (Lonh’s parents were admitted to the U.S. as Cambodian refugees in the 1980s.) Much of Lonh’s food starts with kroeung, a paste of muddled lemongrass, lime leaves, galangal, turmeric and garlic. This serves as the backbone for the entire menu. Last fall I was transfixed by Lonh’s spicy pork num pang, a version of the popular street-food sandwich you can find all over Cambodia. The pork is marinated in the kroeung and grilled, then gathered onto a toasted bolillo roll slathered with Maggi-seasoned mayo and chile sauce. The sandwich is dressed with a luxuriously rich pork pâté, papaya slaw and fresh cucumber. Lonh also is making barbecue chicken wings, marinated in the same paste and lacquered in a sweet fish sauce glaze. Whatever you choose, order a side of the Khmer pickles. The neatly diced purple cabbage, carrots, cucumber and cauliflower sit in a sweet and sour fuchsia-tinged brine and add a punch of acid to all the grilled meats. This Lincoln Heights cafe serves Cambodian numpang, a Khmer sandwich made with a soft, fluffy bolillo roll. Whether they’re filled with spicy pork shoulder, grilled trumpet mushrooms, or fried eggs and pork floss, each sandwich packs a punch of flavor. There’s salt from the meat, creaminess from the pâté, and a satisfying crunch from the layers of toasted shallots, julienned cucumbers, and pickled carrot and papaya slaw. Pair this with a sunny day outside on their patio and let your daydreams of never logging back into your email take you away."
