"In 2006, Nancy Silverton planned to open a restaurant in LA, and the space she found happened to have a pizzeria attached to it. So she added a pizzeria to her plans. Within months, Pizzeria Mozza had become wildly popular. It's now an LA staple, and has even been featured on SNL. Silverton, a former pastry chef, is known for her incredible dough. She lets the dough, which is denser than typical Italian pizza dough, sit for 36 hours before baking it in an Italian oven at 700 degrees for four minutes. The result is an airy, chewy, and bubbly pizza crust. She tops it with ingredients like squash blossoms and fennel sausage. If you go to Pizzeria Mozza, try to save room for dessert. "We imagine these are the meatballs chefs are served in heaven as a reward for their hard work on earth. Pork, pancetta and veal are lightly bound with breadcrumbs and seasoned with garlic and red pepper flakes before being dredged in flour and seared. They're then simmered in Nancy Silverton's glorious passata de pomodoro sauce and served under a snow-drift of Parmigiano-Reggiano. A few slices of bread and a spoon come as well, because you don't want to miss a drop. So how come this isn't number one? No matter how much we ranted and raved, most of the people we talked to about it said they don't eat veal and would never order it. Too bad really, since we trust Mozza only sources humanely raised meat — and thus is #5. 6602 Melrose Ave., Los Angeles; (323) 297-0100. There’s an argument to be made that Pizzeria Mozza kick-started LA’s current pizza obsession, and we are making it. This spot on Highland and Melrose has been open since 2006, and has barely taken a breath since. Despite being full every night of the week, the pizzas here are as good as ever. That mostly comes down to the toppings, including the legendary goat cheese, leek, garlic, and bacon pizza. If you’re anything like us, you head to Mozza fully intending to try something different, but end up ordering this anyway. If there was such a thing as LA-style pizza, this would probably be it."
