Sapp’s boat noodles are magnificent: murky, organ-rich beef soup amplified with shrieking chile heat, thickened with blood, the tartness of lime juice locked in muscular poise with the brawny muskiness of the broth. Sapp may be the best lunchroom in Hollywood, crowded at noon not with revelers but with people who have come to Thai Town to shop and eat the boat noodles, the grilled chicken and the bright-green “jade” noodles tossed with bits of Chinese barbecue.” [LAW] My folks and I have been going to Sapp since I was a kid. I’m so sad that they changed their dining room, because it’s been that way ever since I was a child. I always get the fish balls with egg noodles, dry. That’s the one my dad always orders too. Then my mom would get the sen chan pad bo, which is like jade pad thai, but with a very clear-style noodle, and served with a lettuce cup underneath. It’s super sweet and topped with crab meat. Sapp is really my favorite. And we would always go to Bangluck Market across the street, then Obet & Del’s is right down the way… Boat Noodle Soup We don’t need to tell you about the boat noodle soup at Sapp, mainly because we’ve told you about it so many times already. (Seriously). This soup from our favorite Thai Town cafe is a remarkably complex bowl of noodles, with an endless list of ingredients combining for super-interesting combinations of flavors and textures: It’s funky, spicy, sour, and sweet, with tender slices of beef filet and firm rice noodles bathing in a cinnamon, galangal, and anise broth. Just before serving, it’s topped with crunchy bean sprouts and fried pork skin. If this soup’s not appealing to you, frankly, we don’t know why you’re reading this. While shooting an episode of “No Reservations,” Bourdain visited Sapp Coffee Shop, a strip mall restaurant in Thai Town celebrated for its steaming bowls of Thai boat noodles. He slurped and sweated his way through a bowl of noodles, chile-spiked broth and bits of meat, and decided that “in L.A., the much-maligned strip mall is your friend.” 5183 Hollywood Blvd., Los Angeles, (323) 665-1035. Don’t be misled by the name: although Sapp Coffee Shop does serve caffeinated drinks, you’re here for the boat noodle soup. This magical bowl is the stuff of legend, on par with the Loch Ness Monster or finding the perfect work/life balance - it’s funky, sour, spicy, and sweet; filled with silky noodles and sliced beef. We also like the jade noodles (mostly because there’s a mound of duck, pork, and dried crab on top) and sen chan pad pu, an excellent fish dish that’s heavy on the tamarind and more pungent than other versions around town. If Alexander Graham Bell saw how you used your phone, he’d be pretty confused. He wouldn’t believe it’s possible to look up pictures of the world’s biggest turtle at 3am because you can’t sleep. Or to use this device to find a restaurant when you’re on a work trip in Boise, get directions there, then pay for your food once you arrive. Because that so-called phone is actually a computer with 100,000 times more processing power than the one Apollo 11 used to get to the moon. Thai Town’s Sapp Coffee Shop is a coffee shop much in the same way that the supercomputer in your pocket is just a phone. Yes, Sapp has been serving coffee since the ’80s, and yes, people drink it, but calling it a coffee shop is selling it short - because coffee is far from the number-one priority here. In fact, it’s probably somewhere around the 93rd - behind the other 92 things on the massive, illustrated menu. We couldn’t tell you exactly what the number-one priority is, but we can tell you what ours is: the boat noodle soup. This incredibly complex dish has a huge combination of flavors and textures. It’s funky, spicy, sour, and sweet, with a cinnamon, galangal (a piney relative of ginger), and anise broth that envelops tender slices of beef filet and adds incredible depth of flavor. Ordering your bowl “with beef and everything” - which you should - makes those flavors even deeper, thanks to the addition of tripe, liver, and tendon to the mix. And floating atop it all are bits of fried pork skin, crunchy bean sprouts, and silky, slightly firm noodles, ensuring no two bites or slurps will be the same."
