Si vous êtes comme le mixologue et génie des cocktails Ryan Chetiyawardana, vous le fermez et ouvrez un nouveau bar et un nouveau concept au même endroit. C'est en tout cas l'histoire de Lyaness et de son prédécesseur Dandelyan. Rien ne dit mieux d'un bar à cocktails haut de gamme qu'un intérieur cossu, rappelant les salons d'autrefois où l'on recevait les invités, où l'on buvait beaucoup d'alcool et où l'on infusait des ragots comme du bon thé. Les banquettes en velours bleu céruléen, les tables en laiton et les gris tourterelles dégagent une aura d'argent et de confort, compensée par des touches de marbre et des motifs sixties discrets. C'est le genre d'endroit où Don Draper irait boire, bien avant qu'il ne soit frappé par les mauvais costumes et les chaussures douteuses dans les années 70. Chetiyawardana, souvent surnommé Mr Lyan, est l'un des barmen les plus récompensés au monde. C'est un homme qui connaît toutes les saveurs imaginables qui entrent dans la composition d'un cocktail, ainsi que quelques autres que vous n'auriez même pas cru possibles. Les 21 boissons sont organisées autour de sept ingrédients clés : King Monkey Nut, Purple Pineapple, Infinite Banana, ONYX, Aromatised Milk Wine, Old Fashioned Whisky et Ultra Raspberry. Vous reconnaîtrez certains d'entre eux, d'autres non, et ce n'est pas grave : le menu très descriptif devrait vous donner une idée de ce qui vous attend. L'une de mes trouvailles préférées sur la carte des cocktails est la carte des boissons, très astucieuse, qui présente chaque cocktail sur un graphique allant du jour à la nuit, de la lumière à la richesse, afin de vous aider à choisir votre boisson idéale. En cas d'échec, l'équipe, ridiculement bien informée, prendra le relais et vous parlera des cocktails pour vous aider à faire votre choix. Après tout cela, si vous ne trouvez toujours pas la boisson que vous recherchez, ils vous en concocteront une en fonction de vos préférences - c'est simple"
