"The restaurant that reinvented Californian cooking has had a fresh spin A century ago, the stone-and-timber building that now houses the French Laundry was an actual laundry – fitting for a place that helped wipe clean tired notions of haute cuisine. From its first service in 1994, under chef and owner Thomas Keller, this rustic retreat in Napa Valley made French fine dining seem playful, Californian. One dish – oysters and pearls – combined poached shellfish with caviar and tapioca sabayon; another – salmon tartare in a flaky-pastry cone – was inspired by the chef’s fondness for Baskin Robbins. Anthony Bourdain called it ‘the best restaurant in the world, period’. And in 2006, the French Laundry was awarded three Michelin stars, which it has hung on to ever since. Now, in a design overhaul, Norway’s Snøhetta (the studio behind Oslo Opera House and the Times Square reboot, among other projects) has created a huge new kitchen, curved ceilings that mimic the rumples of an unfurled tablecloth, a hearth for wood-firing and a garden shaded by Japanese maple. Ever ambitious, Keller has crafted a nine-course seasonal menu to match, with no ingredient starring twice. Grilled wagyu beef might be served with Dungeness crab; beetroot salad topped with red walnuts and preserved green strawberries. Regulars, though, are grateful that his signature pudding – mini doughnuts with cappuccino semifreddo – remains. Keller’s kitchen has long been a springboard for others (René Redzepi did a stint here) but the restaurant continues to evolve. The laundry feels as fresh as it did 24 years ago. "

"3 Michelin stars 2025 (since 2007) Architects studio Snøhetta, 2014-2017 Chefs Thomas Keller and David Breeden Thomas Keller’s legendary destination still doesn’t miss a beat. In fact this may be known as the greatest cooking space in America, as every aspect is carefully determined—from the counter height to the flowing lines of the ceiling. Chef Keller continues to pair classic French techniques with wildly fresh ingredients in a setting that is a perfect storm of restaurant greatness—we should all be so lucky to score a reservation here.Dinner may bring signature oysters with white sturgeon caviar in a warm sabayon studded with tapioca pearls, or Pacific shima aji tartare composed with puffed grains and a vibrant tomato and jalapeño "chiffon". Wolf Ranch quail is then presented with white asparagus and dark cherries, while "Coffee and Donuts" is a perfect finish."

By Josh Sens Thomas Keller continues to reinvent his nouvelle French tour de force, the first ever Bay Area restaurant to receive a third Michelin star in 2006. A new glass-sheathed kitchen is currently under construction, designed by Oslo-based firm Snøhetta, who pedestrianized Time Square in 2014. The $295 tasting menu is still one of the most revered experiences in the food world."

"Is the Thomas Keller spot worth it? Absolutely, at least one time in your life. The French Laundry is currently serving their tasting menu on their courtyard or in their dining room, with prices ranging from $350 to $450. Those looking to dine more intimately can reserve the Boardroom, a private outdoor dining space located next to The French Laundry’s wine cellar."
