But the swelling crowd outside the tiny Koreatown storefront is there for the short-rib stew, galbi jjim, which is pretty much everything about Korean cooking cranked up to 10 — a violent red lagoon of meat and broth, hissing and bubbling, enveloped in a small universe of steam.
