"1 Michelin star 2025 (new) The husband-and-wife team of Daniel and Bethany Heinze have created one of Charleston's most popular spots. Reservations at Vern's are highly coveted, though some may try their luck at the handful of bar seats saved for walk-ins. Charleston may be a dressed-up town, but inside this hotspot, it's more homey than fussy, with rich wood floors and tables set with flickering candles. Lowcountry ingredients are championed on a menu that reflects Chef Heinze's travels. It all shifts with the seasons but items like charred sourdough with allium butter or raw yellowfin tuna with Calabrian chili are dynamic starters. Pasta is made in house—campanelli with rabbit and vacche rosse cheese in a cacio e pepe sauce is silky-smooth. It's perfectly paired with a selection from Bethany's expertly curated wine list."

Nestled in the mostly residential area of Cannonbourough/Elliotborough, the American bistro pulls from the couple’s strengths, with Bethany on the adventurous wine list and Dano in the kitchen. The menu draws from Dano’s work with hyper-local produce at the former McCrady’s, ingredient-based cooking in California, and travels through Europe with Bethany. Dishes include perfectly roasted chicken in a brown butter jus, fresh campanelle with rabbit, and bouncy charred sourdough with allium butter."

Seats filled up as soon as the reservations opened, because Charleston was interested to see what former McCrady’s employees Dano and Bethany Heinze would do with the space previously held by Italian restaurant Trattoria Lucca. Vern’s is a thoughtful spot exuding easy comfort. Open for dinner and brunch, the menu draws from Dano’s culinary background working with hyperlocal Lowcountry products and California cuisine.
