He is the only Japanese chef serving French cuisine who has been wining three stars for the 10 years since Michelin Tokyo was first published. The dining room is quite simple without any ornaments. This is because he would like all of his guests to enjoy a dish with their five senses.The chef prepares his own special set menu at dinner for ¥20,000. The reason for his own menu is so he can control the ingredients and use the seasonal foods to perfection. Making sure you provided the top ingredients at the peak of the season. The “chef’s choice” consists of around 13 dishes. The specialty, Goat’s milk Bavarian is cooked in his signature style. His stoic attitude to the cooking, combined with the simple and relaxing atmosphere for the guest have consistently earned his restaurant three stars year after year. The French Restaurant is ranked number one among about 850,000 restaurants nationwide, listed in famous Japanese gourmet site. Unwilling to settle for anything less than perfect, Chef Kishida spent years perfecting his recipe. "Le jeune chef Shuzo Kishida est derrière ce restaurant de gastronomie française contemporaine qu’il a ouvert en 2006 après avoir fait ses classes à l’Astrance à Paris pendant trois ans auprès de Pascal Barbot. La philosophie de Kishida s’appuie d’ailleurs sur celle de ce mythique restaurant du XVIème arrondissement : respect du produit, cuisson parfaitement maîtrisée et assaisonnement précis. Mais contrairement à son restaurant de référence, on ne trouve pas ni menu fixe ici, ni carte. Kishida propose des menus « carte blanche » (de 7 à 13 plats/portions) qui changent quotidiennement en fonction du marché et des envies du maître des lieux. Il accorde également une attention toute particulière aux techniques de cuisson, n’hésitant pas à recourir à des méthodes extrêmement lentes pour conserver les goûts. Si vous ne pouvez pas vous permettre de venir y dîner, laissez-vous tenter par un déjeuner gastronomique au Quintessence. Avec un menu de 7 plats incluant un digestif sous la barre des 9000 yens, le rapport qualité-prix est fantastique. Le Michelin qui l’a gratifié de 3 étoiles et François Simon l’adorent, nous aussi.
