"A l’image du Bouillon Chartier à Paris, le Borchardt est une institution berlinoise avec une histoire longue de plus de 150 ans. En 1853, August F.W. Borchardt, alors caviste installé près du Gendarmenmarkt, ajouta une corde à son arc en devenant traiteur. Son talent le conduisit rapidement à devenir l’un des fournisseurs de la cour de l’Empereur. s'imposant ainsi comme l'une des étapes obligatoires pour la bourgeoisie berlinoise de la fin du XIXème siècle. Finalement rouvert en 1992 après des années de fermeture, Borchardt a reconquis ses lettres de noblesses, redevenant la brasserie incontournable qu’elle était un siècle plus tôt. Les élites médiatiques et artistiques continent de s’y rendre et côtoient les anonymes allemands et touristes étrangers qui s’y pressent chaque jour. La Wiener Schnitzel serait d’après les Berlinois eux-mêmes la meilleure de la ville. C’est l’été qu’il est le plus agréable de venir s’attabler au Borchardt quand le joli patio ouvre ses portes. Réservation fortement recommandée."
