The vibe is "dive bar meets Chinese takeaway," with black and gold walls, waving lucky cats, and floral plastic tablecloths, and there’s serious talent in the (small) kitchen in the form of Lee Tiernan. Come for a dinner big on flavors, spices, and offal, with every component slow-cooked, crafted, or smoked in house, or a more kid-friendly brunch of cinnamon-banana flatbreads. "If St. John is the most influential restaurant to have opened in London in the last three decades, F.K.A.B.A.M. is its most original offspring. Lee Tiernan left his head chef job at St. John Bread and Wine, the restaurant’s small plates-focused spinoff, in 2013 to open Black Axe Mangal in 2015. Reopening after the pandemic lockdowns, he took inspiration from the musician Prince and rechristened the place F.K.A.B.A.M. (for “formerly known as Black Axe Mangal”). The concept, however, remained the same: a rethinking of the classic kebab shop where the offal-forward menu is served in a black-walled interior accented by vermilion red Chinese décor, elaborate murals and Mexican oilcloth table coverings. The well-heeled neighborhood of Highbury had never seen anything like it. The menu draws on Turkish, Sichuanese, Cantonese, Japanese and St. John influences, with the imprint of Tiernan’s former employer clearest in the squid ink flatbread with smoked cod’s roe, which seems like a bolder, more flavor-forward riff on St. John Bread and Wine’s beloved smoked cod’s roe and soft-boiled egg on sourdough toast. Here, a round of craggy, coal-black bread is topped with a quenelle of cod’s roe — whipped with garlic, bread, milk, lemon juice and fish sauce until emulsified — and sits alongside a warm, butter-doused egg yolk that forms a rich golden pool when pierced with a knife. — J.H. 156 Canonbury Road, Highbury Lee: I’ve never had a bad dish there. But the flatbreads and laksa [a Southeast Asian noodle soup] are incredible. And I love Lee [Tiernan’s] bravado. Lowe: The glitter they used to put on the squid ink flatbread certainly helped make the dish famous. I remember going once and the glitter wasn’t there anymore, and Lee said it was because the Environmental Health Department had classified it as a foreign body in the food. But it’s still such a visually striking dish."
