He certainly won't shush or rush you: “I want people to feel relaxed when they come to my restaurant.” Cheerful, laid-back, and fluent in English, Onuki opened Isana Sushi Bar in 2012 after spending nearly a decade in London as the sushi chef at Zuma. On the ground floor of the Hotel S in Roppongi, the space is warm and glowing with seven counter seats and two tables. / Tell us about your first impressions when you arrived. Start with a Japanese craft beer like Tokyo’s Coedo Shiro wheat beer before moving on to sake. Onuki offers a few small-batch varieties that work marvelously with signature pieces like the seared golden-eye snapper nigiri. Main event: the food. Give us the lowdown—especially what not to miss. The ¥15,000 tasting menu is a succession of sashimi and sushi courses interspersed with cooked seasonal dishes like grilled scabbard fish and blanched cod milt in ponzu sauce. Sea urchin is usually sold in an alum solution to keep its shape, but Onuki seeks out varieties kept in natural seawater. A six-glass sake pairing course is on offer for ¥18,000. What’s the real-real on why we’re coming here? Isana isn't the typical high-end sushi experience but is a refreshing break from the traditionally intimidating endeavour. It may not be top-end, but the quality is excellent."
