"Yucatan Located in the Mercado la Paloma in DTLA, this small restaurant specializes in Yucatecan food and serves three different tamales, two steamed and one baked. The steamed tamales come filled with either achiote-seasoned chicken or vegetables. The baked tamale has a crunchy texture and is filled with achiote-seasoned chicken, hard-cooked eggs, sliced tomatoes, and epazote. 3655 S Grand Ave, Suite C6, downtown. Chichen Itza is a food stand specializing in Yucatan cuisine inside South Central’s Mercado La Paloma. For those unfamiliar with Yucatecan food, its most famous contribution is the spicy, acidic, and colorful cochinita pibil. This tender pork dish is rubbed with a blend of sweet and savory spices, lots of fresh citrus, and bright red achiote paste, consisting of annatto seeds, garlic, and chiles. It’s then cooked gently inside a banana leaf, shredded, and topped with pickled red onions for some extra sourness. In other words, it’s delicious and goes great in Chichen Itza’s pan frances, the softer and wider cousin to the French baguette. This torta contains so many sweet, sour, and smoky flavors that don’t require the help of mayo, salsa, or other condiments to make a lasting impact. The marinated pork pulls apart with every bite, and the homemade bread soaks up every ounce of the achiote’s tangy drippings. Gilberto Cetina of Chichen Itza serves up Mexican seafood specialties at Holbox inside the Mercado La Paloma. Look for ceviches and tostadas using ingredients sourced from Baja and the Yucatan, including hard-to-find blood clams. Open for takeout, as well as DIY meal kits, Tuesday to Sunday from 11:30 a.m. to 8 p.m. Holbox is the new Yucatán-style seafood restaurant from Gilberto Cetino Jr., whom you may know from Chichén Itzá. Like Chichén Itzá, Holbox occupies a corner of the Mercado La Paloma complex. As at Chichén Itzá, you wait in line to order, and commandeer as many kinds of chile sauce as you are allowed. As at Chichén Itzá, you will wind up with twice as much food as you thought you might be — especially if you also walk over to Chichén Itzá and order a couple of panuchos and a plate of papadzules to go along with your seafood. There are huge surf clams, marinated in bitter orange juice, spilling in swirls from their shells; huge, fresh oysters from Oregon; and one of the best shrimp cocktails in the city — plump, crisp bits in a purée-filled sundae glass crowned with a single steamed prawn. The blood clams surpass what you’ve had at the famous Baja street stands. The tortas, butter-crisped French rolls stuffed with avocado and breaded shrimp, are predictably spectacular. And the yellowtail-uni ceviche is magnificent, melting into the sharp chile-lime snap of its marinade, with a glorious excess of rich, fresh sea urchin roe. Is transcendence too much to ask from a seafood tostada? That I’ll leave up to you."
