Amid the street food stalls and artisan breweries, this place has been there from the start; a natural wine-importing business with a bare-bones bar and kitchen. Draw up a stool and turn your attention to what really matters: the scribbled blackboard by the bar, announcing the day’s menu. As regulars know—and try to keep on the down low—there’s some serious talent in the kitchen; head chef and co-owner Stephen Williams won a Michelin star when he headed up The Harwood Arms. If it’s Saturday and there’s a baked ham on the counter, then order a plateful to start, and make sure you get some bread, served with salty, silken whey butter. After that, take your pick of the ten or so small plates from the board."

Unsurprisingly, the wine here is worth shouting about with a changing list is made up of wines sourced from small producers, and is organic, biodynamic or natural. Steve Williams is a chef's chef — cited by James Lowe, Brett Graham, and Florence Knight in their top five in the city. Raef Hodgson, of Gergovie Wines — largely low-intervention styles — runs front-of-house without hubris. Go for roast ham with a spot of English mustard, a glass of crémant, and maybe a pie, too. Always order the fritters."

"Though this busy wine bar and shop, tucked under a railway arch near London Bridge station, opened 14 years ago, it still feels like a place for those in the know, mostly because of its popularity with restaurant industry folks. Diners squeeze in beneath the domed, metal-clad ceiling — with a few more gathering at outdoor tables in nice weather — to sample the natural wines and ever-changing menu of modern British- and European-inspired dishes. Working in a tiny open kitchen behind the bar, the chef, Steve Williams, focuses on mostly local ingredients that can be prepped ahead and fired quickly; there are raw vegetable salads, chicken terrines, braised pork and, if you visit on the right summer day, tomato fritters. The tomatoes, grown on the Isle of Wight off the south coast of England, are roasted for five hours until they’re dense and jammy, then dipped in a yeasted batter, which is fed pinches of sugar throughout the service to keep it lively. The yeast produces foamy bubbles that fry into an unusually light and snappy crust. Still hissing when they arrive at the table, the fritters come sprinkled with sea salt, ready to be dragged through a scoop of tangy aioli. "
