"Flor, in Borough Market, comes with serious credentials; after all, it's the long-awaited little sister to the Michelin-starred Lyle’s. Its ground-floor wine bar doubles as a bakery, already known for its sourdough; supplies are limited, so invest in a loaf on arrival. Stools—reserved for walk-ins—line the window and marble counter, which overlooks the kitchen (tiny is an understatement; even four chefs seems a squeeze). With limited space for storage (and chefs), the menu is deliberately simple. It’s all about the best ingredients, combined into flawless small plates, from anchovy toast draped in cured Noir de Bigorre ham to a springy lettuce salad, laced with preserved lemon, parmesan, and toasted hazelnuts. They’re inviting chefs and friends from all over the world, including Aziz Ansari and chef Matty Matheson, to create their own pizzas. And at the end of the week, £3 of every pizza and £1 of every slice will then be donated to a charity of the guest chef’s choice. Sarah Minnick of Lovely’s Fifty Fifty pizzeria in Portland is this week, with her potato and fontina cheese creation, and next it’s this anchovy number from Philip Krajeck."

A bakery, wine bar, and restaurant on London’s historic Borough Market is the little sister to site to the Michelin-starred, World’s 50 Best recognised Lyle’s in Shoreditch. Higham’s austerely beautiful pastries — quince danishes, unimpeachable pains aux chocolat — give way to an orchestrated bustle come lunch and dinner, with a clam flatbread; scarlet prawns with zippy kosho; and a beguilingly Gothic anjou pigeon dish the stars on the menu thus far. One of the best of the year. "
