The George

"The George is the reimagined dining room of the Fairmont Olympic Hotel, originally opened in 1924 as The Georgian – a space that spent decades as Seattle’s social hub, hosting fashion icons, musicians, and philanthropists across generations of events. The room was redesigned by Spanish studio Lázaro Rosa-Violán, preserving the original Palladian windows and adding hand-painted tiles, Art Deco chandeliers, and marble floors, earning Best Design in the Americas from the Restaurant and Bar Design Awards in 2023. The menu operates as a modern brasserie with a Pacific Northwest focus, covering small plates, raw selections, fresh local seafood, handmade pastas, and chef’s signature cuts sourced from Washington farmers and sustainable foragers. Weekend brunch opens with a scone cart service and includes a mimosa program alongside a broad menu spanning seafood benedicts, French toast, and the Olympic Smash Burger. "
