In 1860 the butcher Pierre-Louis Duval had the idea of creating a restaurant in which the workers of Les Halles could eat a hot meal at a modest price.
He then introduced the "hochepot de boeuf" in his broth.
This dish gave its name to the establishment: Bouillon was born.
The most famous of them is the historical Bouillon Chartier, rue du Faubourg Montmartre. As for the one in the Montparnasse district, it has known several lives since it already existed in 1903.
After having closed, switched to a different name, it reopened its doors in 2019.
