"Ihave a bone to pick with one of the best Chinese restaurants in the region: Too many choices! Diners are handed a flurry of menus as they’re seated in this tidy, light-filled dining room in Fairfax, a tribute to the women in chef Peter Chang’s life, including his wife and fellow chef, Lisa. From the dim sum list, I always fit in pink steamed shrimp dumplings, and from a roster of seasonal specials, hot heads should gravitate toward the cumin-blasted fried squid, a jumble of crisp seafood, scallions, cilantro and Sichuan peppercorns (hence the reason your tongue numbs). One of the best deals around is Mama Chang’s all-you-can-eat “brunch,” offered weekdays for $28 per person. The selection of nearly 30 small plates includes the brand’s popular, blimp-like scallion pancakes and wrinkly green beans stir-fried with sour pickled cabbage, a homey comfort. The hot and sour soup on the standing menu exemplifies how Mama Chang distinguishes itself with seemingly common dishes. The base springs from duck broth, which floats rich bites of duck along with threads of bean curd. One of 19 (count ‘em!) restaurants in the Chang empire, this place is dearest to my heart. The service is brisk and efficient, the 200 seats include round tables with room for as many as 13 diners, and the wine list is as considered as anything from the kitchen, animated by a dozen cooks. They work as one. Indeed, every meal tastes like a mom is cooking just for you."
