Those beguiling naked branches encapsulate chef Shigeki Onogi’s product-driven style of cooking, which strikes the perfect balance between creative and comforting. The intimate, open-kitchen space makes you feel right at home. What should we be drinking? There’s a nicely edited list of sake, shochu and wine, but the Yamazaki whisky highballs, served in delicately thin glasses, hit the spot. Main event: the food. Give us the lowdown—especially what not to miss. The a la carte menu features tapas-sized servings and jazzed-up rice dishes meant for sharing. We love the panko-breaded fried oysters from Hokkaido, the grilled eel confit with bitter melon miso, and the clay-pot rice with horsehair crab. You can also go with the reasonably priced tasting menu, which combines decadent seafood dishes (sliced raw kawahagi filefish dressed in a creamy paste of fish liver and drizzled with ponzu) with griddled wagyu beef and seasonal vegetables served with smooth and concentrated miso dips. The chef stays true to the flavors of Japan but isn't afraid to work in some cream or butter if his palate dictates. What’s the real-real on why we’re coming here?
