L'anatra è sicuramente il piatto iconico del menù, insieme alla rivisitazione del pad thai: due piatti rappresentativi del background della chef e delle sue radici. Nota di merito all'abbinamento non alcolico di kombutcha, sempre interessante e mai banale. Prenotate con tanto anticipo perché i coperti sono pochi e l'hype verso questo locale molto alto. "Instagram review 30 Sept 2024 📍 Potong - Bankok 🇹🇭 Type: 🇹🇭 (🇨🇳) Michelin: ⭐️ Price: 💶💶💶💶 (250-300€) Rating: ∞/10 🗓️ Visit: December 2023 🔅…🔅 ∞/5 Out of this World -Exclusive festive menu I can’t hide some anxiety in writing this review…It’s strange…I’ve been a guest of hundreds of legendary chefs all oround Asia anymore…but She…She is like the God managing Angels table…all of them are sacred figures…but She…She is simply the supreme divinity above all others! “The best of my life”…maybe the most abused sentence among foodies…but after almost one year from that night…it’s still engraved in my memory as the highest moment of my dining life. Collecting more and more awards day after day…@chefpam and her @Potong are legends that really don’t need any introductions anymore. Culinary experience here goes far beyond the usual “food + service”…your dinner at Potong is a truly voyage across Chef Pam life. A welcome drink at the ground floor…an aperitif on the rooftop…your night will bring you all around this thiny thiny building that used to be Chef Pam family’s ancestral palace. It would be quite banal to rate food quality you can easily guess by yourself (btw…you are wrong…it’s higher!)…. but what I mostly love to remember is Chef Pam unique ability to “tell her story” and “express her style” through the tasting. Her one of a kind progressive Thai/Chinese cuisine truly embodies her 5-Element philosophy of “Salt, Acid, Spice, Texture, and Millard Reaction”. Bite after bite…I was more and more blown away by the perfection of that balance…totally inside the story that dishes were telling…I was living it like a movie! Pam...I know I'm not a notorious food critic or a famous foodie whose compliments you're probably used to anymore…But I hope it makes you happy to know that thanks to your art, you’ve stolen the heart of a fan somewhere in Southern Italy… giving him the most unforgettable dinner of his life. "SAS: Potong ligger i ett före detta apotek i Bangkoks Chinatown och mycket av originalinredningen finns kvar. Här lagar Chef Pam – Pichaya Soontornyanakij – mat inspirerad av sin thai-kinesiska bakgrund och av de fem elementen sälta, syra, hetta, textur och maillardreaktion (den kemiska reaktion som sker mellan kolhydrater och aminosyror vid kraftig upphettning och skapar en brun färg samt nya smaker och dofter, exempelvis när bröd rostas eller kött steks). Varje måltid är som en berättelse som förmedlas av serveringspersonalen. Kockarna gör även sina egna fermenteringar och inläggningar, som står på display i rader av burkar precis utanför det pyttelilla köket. Högst upp i det smala huset hittar man cocktailbaren med dj:ar och drinkar. Både Chef Pam och restaurangen har fått flera utmärkelser. Bland annat var hon den yngsta kocken och första kvinnan någonsin att belönas med både en stjärna och titeln ”Årets restaurangöppning” av Michelinguiden."

"Amazing modern Thai Chinese tasting menu is beautifully renovated Chinese medicinal shop and home that has been in chef Pam’s family for 4 generations. One of the best meals i have had in a very long time. Highly highly recommended but make reservations early as they’re quite hard to get. Thai Chinese fine dining restaurant and bar. Visited 9/22. VERY DIFFICULT RESERVATION. MAKE RESERVATION EARLY. As of 12/24/23 reservations seemed to be available through the end of April. Tables only available in April. On 3/20/24 made reservation for 6/20/24 and there were very few tables available (availability on only 4 days in June and 9 days in July). "
