Fondé en 2016 par David Carter, SMOKESTAK s’est rapidement imposé comme une référence dans le paysage culinaire londonien. Ce restaurant se distingue par ses spécialités de viande fumée, notamment les ribs, le brisket, et le pulled pork, préparés selon des techniques de barbecue traditionnelles. "About time, too. Having built a cult following for its smokehouse meats, street food supremo Smokestak has done the decent thing, opening up a restaurant proper. And a proper restaurant it is: 75 seats inside, 30 more outside. A stygian, semi-industrial space with a hum of throbbing beats, it’s like eating in a medieval nightclub. Keeping with the medieval theme, it was – on the night of my visit at least – dominated by men. Not in a lads-lads-lads kind of way, calling us wenches and slapping our bottoms, but more of a bring-the-boys-for-a-night-of-bromance kind of shizzle. Tables and booths were taken up with bearded thirtysomething blokes, supping on craft beers and cocktails: all part of the man-tastic, meat-lovin’ vibe. At one stage, I saw two fellas do a tiny fist pump (too cute!). Turns out, they’d just found the beef brisket on the menu."

"Alors oui, le concept de tapas au grill comme si on était à Bilbao n'est pas nouveau à Londres. De plus en plus d'établissements s'alignent sur cette direction artistico-culinaire, mais s'il y a un endroit qui pourrait avoir influencé toutes ces anglo-bodegas, c'est bien Smokestak. Installé à Shoreditch depuis 2016 après avoir expérimenté son fumoir sur des parkings de l'Est londonien, David Carter fume désormais à tire-larigot dans ce qui ressemble à un ancien entrepôt industriel. Une musique techno enjouée vous installe comme il faut dans cette ambiance très Shoreditch. On a dit tapas, alors ici, comme souvent (malheureusement, je suis un nostalgique de l'entrée-plat-dessert), on prend un peu de tout et on partage ou pas avec ses voisins. En dehors des inévitables poitrines de cochon (un fondant !) et de bœuf (du beurre), ne manquez pas les croquettes de joue de bœuf, véritables confiseries pour carnivores. Équilibrez-moi ça avec un slaw de chou à la menthe, arrosez le tout avec un bon Merlot argentin et vous devriez passer un bon moment entre amis. Bib gourmand"

"Sizzling-hot barbecue joint off Brick Lane You may have seen the queues for Smokestak snaking through food markets (Dinerama, Street Feast) across the capital, and the smell of barbecued meaty gloriousness is hard to forget. The food truck opened its first restaurant just off Brick Lane a few years ago. It's a real passion project: chef-patron David Carter who worked at Gordon Ramsay at Claridge's before moving to Texas and buying a 4.5-tonne smoker to master the art of barbecuing. Smokestak's cool interiors are as industrial as the smoker itself, with black-carbon-stained concrete walls, steel panelling and old workshop tops used as dining tables. A charcoal grill and a wood-burning smoker sit in the middle of the fiery open kitchen. Roller-shutter garage doors reveal an outdoor terrace with tables for the summer months. FOOD The smoke-fuelled menu has grown-up versions of old favourites, such as mouth-wateringly tender brisket buns with pickled red chilli and thick-cut pork ribs with pickled cucumber. Dishes include smoked girolles with beef-dripping toast; pastrami with sour cabbage and pickles; and hot-smoked salmon with rye and creamy horseradish. Vegetarians are not ignored: salt-baked beetroot with goat's cheese and hazelnuts, and a roasted aubergine with toasted cashew nuts and burnt honey' are equally impressive. And sides include celery, almond and preserved lemon slaw; heritage tomatoes with toasted pine nuts; and jacket potato with smoked rarebit. A plum crumble or sticky toffee pudding with burnt-butter ice-cream will leave you feeling sweetly satisfied. DRINK Don't go straight to your table: the candle-lit cellar bar has the same drinks menu in a more moody setting, with a reclaimed Yorkshire stone floor and oak-beam ceiling. Beers are local - IPA from Bermondsey, Dalston and Chiswick - and cocktails are smoky, sour and medicinal. The Penicillin with Scotch, peat, lemon, honey and ginger is enough to cure. Ox cheek (crispy on the outside, succulent on the inside) and posh pork scratchings make dangerously moreish bar snacks. VERDICT Smokey barbecue from street food kingpins."
