Soyez averti cependant que manger dans la salle arrière ne garantit pas la même expérience. La réputation du chef Daisuke Nakazawa est redoutable, ce qui contraste avec les plaisanteries joviales entre les itamae derrière le comptoir. Cela montre simplement que cette équipe aime son métier et est heureuse de se produire pour ses invités, peut-être en utilisant une crevette vivante qui se tortille pour un peu de spectacle... Le style signature du chef Nakazawa associe un poisson extrêmement tendre à du riz parfaitement assaisonné, une touche de wasabi et une brosse de nikiri pour des résultats toujours excellents... Une soirée, par exemple, peut présenter un éventail de sushi allant du saumon cerise d'Hokkaido à la coquille Saint-Jacques vivante du Massachusetts avec agrumes et sel. Puis passez à l'uni exceptionnel, et enfin, à un rouleau à la main de thon gras haché si finement qu'il semble presque émulsionné. Il pesce, rigorosamente crudo e freschissimo, è il protagonista del menu a prezzo fisso da 20 portate creato dallo chef Daisuke Nakazawa, che ha imparato il mestiere da Jiro Ono, probabilmente il migliore chef di sushi del mondo. Chef Daisuke Nakazawa’s reputation is formidable, which works as a contrast to the jovial banter between the itamae from behind the counter. It simply elucidates the fact that this is a team who loves their craft and is happy to perform for their guests—perhaps using a live wriggling prawn for a bit of a spectacle. Discover flavorful and fatty cuts of fish available here at a more palatable price point compared to many of the city’s other notable sushi counters. Chef Nakazawa’s signature style combines supremely tender fish with perfectly seasoned rice, a spark of wasabi and judicious brush of nikiri for consistently excellent results. One night, for instance, may feature a spectrum of sushi from Hokkaido cherry salmon to live Massachusetts sea scallop with citrus and salt. Then move on to outstanding uni, and finally, a handroll of fatty tuna chopped so fine that it almost seems emulsified.
