Si un palace comme le Royal Mansour propose évidemment plusieurs restaurants de niveau supérieur, il faut passer la porte en dinanderie de la Grande Table pour goûter une cuisine qui tutoie les nuages. Sur les plateaux de cuivre atterrissent des assiettes en or grâce au talent de Yannick Alléno, qui a élaboré la carte de bout en bout : betterave à l’orange, tajine aux palourdes, langouste de Sidi Kaouki pochée et nage de carottes, chocolat à l’huile d’argan et crème glacée à l’amlou… Certes, l’addition se montre assez rude, mais ce n’est pas tous les jours qu’on goûte la rencontre d’un génie et d’un terroir. Enfin, ne prenez pas peur quand vous verrez la taille des plats : le gaspillage fait partie de la table – c’est choquant pour nous, pas pour eux.
