"Resto trois gros Toto’s minimalist, grey façade drops no hints about the colourful cuisine that awaits within. Occupying the ground floor of a three-storey building in Ipanema, the dining room continues the exterior’s white-and-silver palette, featuring grey pendant lights, grey metal bar stools, a monochrome tiled floor, charcoal leather chairs, and glossy wood and marble countertops. That’s where the restraint and sobriety ends: chef Thomas Troisgros lets his imagination run wild on the menu. Inspired by the ‘bistronomy’ movement – blending the bells and whistles of top-notch gastronomy with the relaxed feel of a bistro – dishes are a vivid medley of flavour. Starters encompass the familiar and the unexpected – classic steak tartare or chicken-heart tacos, for example – while mains bring new twists to comfort food, with highlights such as grilled octopus with pumpkin purée, and ancho steak with cracked egg, caramelised onion and chips.
