"Parish BBQ is a new spot that opened in 2025. The owner, previously at Franklin BBQ and Interstellar, has taken his BBQ knowledge and combined it with Creole flavors for a unique fusion concept. You’ll find pulled duck with orange zest, the most tender pork ribs, perfect brisket every time, boudin balls, and crawfish dressing. Everything I’ve tried multiple times has been solid. I’m a big fan of the pimento mac and cheese too. They’re still running as a humble food truck, but I can see awards in their future. Get there early and try the Lagniappe Platter—it comes with a little of everything, meats and sides included. Parish Barbecue, located at 3220 Manor Rd in East Austin, is a Michelin Bib Gourmand food trailer that specializes in Central Texas barbecue with Louisiana roots. Situated in the backyard of Batch Craft Beer & Kolaches, it offers a unique fusion of traditional Texas smoked meats and Cajun flavors. The Experience Expert Pedigree: Founded by pitmaster Holden Fulco, an alum of legendary spots like Franklin Barbecue and Interstellar BBQ, the trailer focuses on quality over quantity using old-school, low-and-slow methods. Atmosphere: A relaxed, family-friendly outdoor setup with picnic tables and a turf area for children. Guests can order beverages and find additional seating inside Batch Craft Beer & Kolaches. Late-Night & Popularity: Recognized for its fast service and as a top destination for local specialties, it often sees popular items like pulled duck sell out by early afternoon. Menu Highlights The menu features traditional staples with creative Louisiana-inspired twists. Tribeza Tribeza Unique Meats: Famous for pulled duck with spiced cracklins and house-cured ham glazed with Louisiana cane syrup. Cajun-Infused Classics: Brisket and pork ribs are bathed in Tabasco and finished with a custom Cajun spice blend. Distinctive Sides: Highly-rated sides include crawfish cornbread dressing, pimento mac and cheese (topped with crumbled Zapp's Voodoo Chips), and Acadiana-style potato salad boiled in crawfish-seasoned water. Breads: The fried pistolette rolls served with honey or Tabasco butter are frequently cited as a must-order. Yelp Yelp +3 Planning Your Visit Hours: Open Thursday – Sunday, 11:00 AM – 8:00 PM (or until sold out). Ordering: Pre-orders for pickup are available and can be placed one week in advance. Pets: Dogs are allowed in the outdoor seating area. Parking: A free on-site parking lot and street parking are available, though shared with the brewery"
