He immersed us in full-blast iterations of Northeastern Thai cooking; we were rapt to his stories written in blood soup and etched in the curve of grilled pig’s collar. His success empowered other chefs to mix memoir and imagination in ways that helped delineate the only-in-L.A. ethos of the 2010s. Yenbamroong’s food continues to thrill, whether it’s the fun of his tower-of-power fried chicken sandwich or the electric acid test of his larb(particularly the livery pork salads). The Venice location is the newest; the Silver Lake outpost, with its vibe that still recalls a pop-up in a recently vacated locker room, will forever have many of our hearts. The West Hollywood original is the sly upstart among the group: It has grilled, crackly skinned pig’s tail on the menu, and dishes that recall its origins as Talésai, the Thai restaurant that Yenbamroong’s parents opened the year he was born. Try the comforting chicken grapow, ground chicken with garlic and basil underneath a fried egg. WeHo is the only one that serves cocktails (lychee-infused vodka spikes the Thai martini), though, as with the other two Night + Markets, it has an adventuresome, smartly annotated wine list. C'est sans doute pour cette raison que Night + Market Song, ce petit resto ultrabranché implanté sur Sunset Boulevard, fait un véritable tabac depuis son ouverture par Kris Yenbamroong, un jeune chef diplômé de cinéma, qui n'a aucune formation culinaire autre que celle d'avoir grandi dans une famille de restaurateurs thaïlandais de L.A. Sa devise : " une cuisine authentique et délicieuse, pour accompagner une soirée arrosée entre amis ". La décoration fantaisiste, colorée et hype est en effet le cadre idéal pour déboucher une bière thaï avant une soirée dans les bars du quartier ! Étonnamment bon marché, Night + Market Song propose une cuisine effectivement authentique, aux saveurs aiguisées et fraîches. For a good time, order something super spicy and pair it with one of the restaurant’s very fine natural wines. This West Hollywood original has become one of the most recognizable restaurants in the city with locations in both Silver Lake (Song) and Venice (Sahm). One could argue that the crispy rice salad and fried chicken sandwich are the signature dishes here - and they might be right - but the khao soi needs to be in the conversation. N+M actually has two versions on their menu, the mushroom and tofu-filled khao soi jay and the khao soi neaua, which comes with braised short rib. Both are excellent, but I prefer the khao soi jay as its umami flavor matches up perfectly with the dark and earthy broth. That said, go for the version with the tender braised short rib if you’re looking for something a bit more savory."

"rec'd by everyone: 30-something chef Kris Yenbamroong, may not have any formal culinary training, but no matter: He learned how to cook in Bangkok, and in the kitchen of his parents' long-standing Thai mainstay, Talésai, which is now the (sort of) home of Night + Market. Tucked away behind a curtain in the back, you won’t find the white tablecloths that mark the former. Instead, you’re met by a stark white space where the only décor is a handful of Christmas lights and a Singha beer sign. Here, the hype continues to mount: Maybe it’s the low-slung and crowded communal tables (this place is loud), or maybe it’s the exquisite and (very) spicy street food, like pad thai, grilled fatty pig collar, and fried chicken wings, bathed in “rooster sauce.” The fried chicken sandwich is among LA's best."
