Fondé en 2014 par le chef américain Will Goldfarb, Room 4 Dessert s’est rapidement imposé comme une référence en Indonésie. Après une carrière à New York, notamment chez El Bulli, Goldfarb a relancé ce concept à Bali, mêlant techniques modernes et ingrédients exotiques indonésiens pour créer un restaurant de desserts d’exception. A standout is his Snake Puff, a plated confection inspired by the classic French apple tarte tatin. "9/2024. One of the best dinners I've ever had and definitely the most interesting. 15 course meal that took place in 3 different parts of the restaurant. First 5 were savory, second 5 were dessert, last 5 were small dessert bites. After almost every bite, Abigail or I would say "Oh, interesting" or "wow." There is an à la carte menu, but those who have the most fun here choose the nine-course tasting menu. It’s constantly changing, but one can expect Michelin-level plates like the New Wave (carrot, pumpkin seed, anise, and marigold) and The Sugar Refinery (coconut nectar chantilly, chocolate toblerone, soursop, and Balinese meringue) with the option to pair them with mocktails or cocktails. When it was shuttered following a fallout with his partners, Goldfarb upped sticks and relaunched it in Bali – this time flanked by palm trees, with ingredients such as fresh cocoa, palm sugar and soursop on his doorstep. His all-pudding tasting menu features Incidente Stradale, mixing jamu, a traditional tonic, with coconut and coffee, while Angel’s Kiss is made with jackfruit, pandan and mango. All of his creations are paired with wine or a cocktail – the Planifoglia, a cheesecake-like sabayon, is matched with a vodka-based mangosteen and hibiscus concoction. From April the surrounding gardens will also be put to work, meaning medicinal herbs will be picked minutes before they’re used.
