"Oh, how we love a good chippy. The fish and chip shop is a national treasure. Forget pints on the street or bangers and mash; for my money, there is no meal as nationally revered as battered cod and properly chunky, drenched-to-soaking in vinegar chips. But at Tollington's, in North London's Finsbury Park, Ed McIlroy (of best-burger-winning Four Legs fame) is bending the rules. He took over an old-school chippy and kept the bare bones of the shop as is, restoring its tiling and utilitarian metal counter. But instead of slinging battered sausage and Pukka pies from the pass, the team here are taking cues from the Basque Country. Plump prawns, thick scallops in the shell topped with truffle, and buttery sardines transport diners perched on tall wooden stools from North London to North Spain. For pudding, we tried the flan, which wibble-wobbled pleasingly. The drinks menu casts its gaze to Spain, too, spotlighting beer, Basque cider, and vermouth. On sunny days, people spill onto the street pre- or post-supper, giving proceedings a relaxed, pubby feel. This is a fresh take on a British institution transporting us to sunnier climes.
