"Today, many a maiensäss in the Swiss mountains has become a hotel, and accommodates visitors instead of cows, farmers' maids, and cow hands. Possibly the most beautiful of them is the Guarda Val in Grisons, which the entrepreneur and billionaire Alfred Gantner discovered while out walking and bought right away. He and his wife Cornelia carefully restored the cabins and stalls built from stone and weathered wood, some of which are 300 years old, and added a few new buildings that also look as if they had stood there since time immemorial. The owners wanted everything to be rustic and authentic, close to nature, and far removed from Alpine kitsch or a designed look. They succeeded: the rooms need nothing more than wood and light-colored fabrics to appear pure and wonderfully cozy. Little extras and modern comfort - from a four-poster bed to a fireplace and bathtub - have been inserted so discreetly that they do not spoil this mountain farmer's idyll, but enhance it almost imperceptibly. What used to be the cowshed has become a gourmet restaurant where rural cooking is interpreted so surprisingly that the Mich sweat in the l with whey on free from tren authentic as t ing on herb tro in an ice-cold a telescope at found heaven"

"Pasquale Cirillo: Locale molto accogliente, all'interno di una vecchia baita alpina di quasi duecento anni. Il legno impera e rende gli interni caldi e accoglienti, anche grazie a un uso sapiente delle luci. Dalle finestre si gode un panorama meraviglioso sulle favolose montagne che incastonano Lenzerheide, e la piccola Sporz in particolare. Il panorama da solo vale il viaggio. La cucina combina piatti della tradizione alpina con influenze francesi. La qualità delle materie prime è elevata, e l'esecuzione dei piatti è curata. Lo chef Paul Berberich punta chiaramente alla stella Michelin, che il Guarda Val aveva già ottenuto in passato, qualche mese prima della mia precedente visita, prima del cambio di equipe. Si mangia chiaramente bene, ma da un posto del genere mi aspetterei una più marcata differenziazione tra le portate, evitando che determinate note speziate si ripetano eccessivamente. Bella la carta dei vini, con alcune vere perle. Servizio gentile, ma a tratti un po' lento. Sicuramente da migliorare. Animali non ammessi. Piatto consigliato: variazioni di vitello.
