"Not a typical café, not a typical bar. The journey for Gregory in this place started on May 11 2012, when it was called Casa Romero and it was a loungy beer café. After seeing it miss the targeted public, he started to research other possibilities. Cleaning the place up, re-ordening the backbar and changing the menu a bit didn’t do the trick for him. So he started to research the upcoming trend after the well known Gin-hype, Cocktails. He began watching bartender videos and got the opportunity to participate in Diageo Bar Academy. After the last the wheels started turning. With a novice-knowledge, but especially the right people to contact and inspire him, he started experimenting and putting classic cocktails on the menu. Not an instant succes in Aalst, a city which was not all that familiar with the professional cocktail scene. But steadily the clientele grew and it became the meeting point for a nice evening out. After running the bar for almost 5 years he felt it was time to take full control of the bar. Januari 1 2017 became his first day as a business-owner. The bar got a make-over a month later and it re-opened under the name: Bar Romarin. With the help of family, friends, and industry-colleagues we wanted to raise the bar to a new level. We raised the level of our premium selection which is reflected in some very exclusive bottles displayed in our backbar (which doesn’t mean those bottles aren’t there to be enjoyed in your glass). Now our team consits of 2 passionate bartenders, each with their own techniques and specialties. First we have Gregory as mentioned above. He loves playing around with twists on classics, making each one unique to the customer. Sometimes a cocktail just needs one extra flavour to make it one’s favourite. Last , but certainly not least we have Rolf. He started his career over a decade ago in this same building, back when it was called Ravazjol. He became infamous for his killer Mojito, and his growing knowledge of cocktails and spirits. This grew further into a succesfull blogging career, you might have come across some of his articles in different magazines under the name ‘Cocktail Nation’.
